You can use any steak you like for this recipe, but in Texas we love the nilgai antelope from the Broken Arrow Ranch in Ingram, Texas. This is a very ornate recipe combining many favorite Texas flavors and foods. However, there is nothing wrong in grilling up the steaks on their own. Just don’t forget the glaze—it absolutely gives the Texas stamp to the dish. If you don’t serve the enchiladas along with the antelope, you will miss both the red and the green chile sauces.
